罗宋汤，是一道上海菜却传自俄罗斯，当时俄罗斯人被音译成罗宋人，于是罗宋人的俄式红菜汤就被称之为罗宋汤了，其实罗宋汤原本是用甜菜根做的，但到中国之后据说甜菜根版本的罗宋汤太酸不那么适合国人口味，而甜菜根也稍微有点难以取得，机智中国人民就改用西红柿代替了甜菜根<br />

想着冬天了就该吃点暖和的东西所以之前做了两次，超级好吃，吃完之后全身都会暖和起来....虽然我用的不完全是罗宋汤的传统做法，但好吃就完事了鸭~今天就和大家分享下这个超好吃的罗宋汤<br />

八角 一个（我放了一个半，不过一个应该就够了）<br />

本体部分：<br />

之前煮好的牛肉和牛肉汤<br />

做法：感觉我做出来会更像炖菜，酸甜的番茄味作为主角，加入黄油、洋葱和用各种香料压好的牛肉汤增香，蔬菜的配料....其实可以随意一点，不要加味道太过浓郁的蔬菜就好（像金针菇、藕之类的应该都没问题，如果喜欢的话）<br />

开始啦~牛腩提前焯水，将左边的那盘香料爆香之后入牛肉翻炒，再加入热水一同转移到高压锅中压上十几分钟<br />

看到的好多菜谱都是只将牛肉煮至软烂就好，而我在此之上多将牛肉加入香料炒制炖煮，是想用煮出来的牛肉汤为罗宋汤整体增加丰富度（其实可以不用这么麻烦）<br />

爆香是有顺序的，先是生姜八角这样比较耐热的煸炒一下，之后再加其他配料（油用玉米油这样本身没有味道的就好）<br />

爆香之后加入焯好水的牛肉继续翻炒一会<br />

之后加热水转移到高压锅里继续炖，水量没过牛腩就差不多了（稍多也没关系，图片里的水量其实偏少了）<br />

此时我还放入了胡椒粉，因为想让等会罗宋汤的成品多一些辛辣，冬天的汤加一点点胡椒会让人立刻暖和起来<br />

炖牛肉的时候开始准备其他罗宋汤需要的配料，西红柿用开水烫一下后去皮切块，其他蔬菜也同理，切配好这花了不到半个小时，这次我包菜切了一整个结果太多了233333<br />

用黄油和不粘锅似乎没什么热锅冷油的说法，在凉的锅里直接加入黄油加热融化就好，等黄油完全化开了就是放入洋葱的时机<br />

洋葱可以多炒一会，据说更长时间炒制可以让汤变得更香<br />

洋葱炒好后依次加入胡萝卜、包菜、西红柿，盖上盖子稍微焖一会，土豆我在最后煮的时候才放<br />

趁这个空闲我去炒了之前忘记的面粉，到微微发黄的程度就ok，再炒就过了（也看到用油炒面的做法，但我不想摄入太多脂肪就选择干炒了）<br />

然后加热水、番茄酱、之前炖好的牛肉和牛肉汤，汤少少的放一点就能带来足够的香味了....大概四分一左右，注意把调料都去掉，你一定不想突然吃到八角╮(－_－)╭<br />

不带炖牛肉的时间我差不多用了一个小时二十分，罗宋汤大概属于那种....配料很多感觉非常复杂但全程毫无难点并且可以做的很好吃的菜，我一共做了两次，一开始是不加咖喱的版本之后是加的，感觉还是不加咖喱稍微好吃一点点（当然如果喜欢咖喱加点也ok）<br />

并且这个罗宋汤还能做出很多变化，比如下面条或者将其汤汁作为披萨的调料，如果加入更多水的话还能把他当做番茄味火锅的汤底<br />

按照我自己的标准的话之前没加咖喱的那个版本应该可以到4分还多，大概就是做出来给爸妈吃了以后父上母上大人会觉得：孩子真是长大了，出去也不用担心没饭吃了的程度（反正我开始学做菜的时候母上大人就是这么说的wwww）<br />
